My Pumpkin pie


A versatile pumpkin pie!

Just mix whatever you have in the fridge and add pumpkin pulp inside.

For my pie I used
polenta flour,
oats
mizithra cheese
yogurt
anise
leaks
parsley
carrots
eggs
semi roasted pumpkin flesh
chia seeds

Just delicious!

AFTER the earthquake...

I had to cook something to distract me...so here it is:
lentil humus-healthy dip made of lentils boiled in salted water along with carrots, celery and leek. I always add one bay leaf and a clove of garlic.

When ready and cool, mash lentils and and add some olive oil.
Store in the fridge for a couple of days. You can also add freshly cut parsley.
ENJOY!

before 11 pm last night I made some bitter choco bites and put them to freeze...

as well as a no bake snack full of protein...


The recipes?
Here:

CHOCOLATE BITES

bitter 90% chocolate
nuts and dried fruit
or /and cereals, like corn flakes and amaranth pops.

Melt choco in a small pan over warm water-add some milk or water
stir and lay mixture on a baking sheet in a dish-
add nuts and fruit, mix and place in the freezer overnight.
Cut into small bits and enjoy!

NO BAKE snack
Use any seeds you have-chia, sunflower, sesame, hemp, add nuts in pieces and dried fruit like cranberries and currants.  Add 1-2 teaspoons of honey and precooked oats, raw or cooked apple bits and mix. Press mixture in a tin or on a baking sheet and freeze. Cut into bars or make balls.
